(as healthy as I could make it)
1 stick real, unsalted butter
3 cups brown rice with vermicilli
3 cups water
3/4 cup of frozen green peas
1/2 tsp sea salt
1/4 tsp large grain Black Pepper
2 chicken breast halves cubed (small)
coconut oil spray
2/3 cup frozen seasasoning blend
2 eggs
1 Tbs. coconut oil
3 to 4 tbs. Soy Sauce or enough to suit your taste
Melt butter in large pot add rice and stir fry until vermicilli is browned.
Add water and lower heat to a simmer, cover and cook for 7.5 min.
Add green peas and cook for 7.5 min. more. Turn off fire and let set.

Grill in a skillet sprayed with Coconut Oil Spray.

Grill in a skillet sprayed with Coconut Oil Spray.

Scramble in a skillet sprayed with Coconut Oil Spray. Chop fine.
Mix chicken, seasoning blend, and eggs in a large serving bowl.
Reheat skillet with coconut oil, add rice and stir fry aproximately 5 min.
Add rice and soy sauce to serving bowl mix all ingredients well.
Add salt and pepper to suit your taste! YUMMMMM!
